Bacon, Lettuce, Tomato (BLT) Salad
Serves: 4 | Prep time: 10 minutes | Cook time: 15 minutes
Ingredients:
Dressing:
- 60ml white wine vinegar
- 2 Tbsp. apple cider vinegar
- 3 Tbsp. purified water
- 3 Tbsp. mayonnaise
- 1 Tbsp. honey
- 1 Tbsp. olive oil
- 1/4 tsp. salt
- Freshly ground black pepper to taste
- Dash of ground red pepper
Salad:
- 600g greens, torn
- 800g tomato, chopped
- 4 green onions, thinly sliced
- 6 bacon slices, cooked and crumbled
- 1 avocado, sliced (optional)
- 300g cubed firm bread
Instructions:
- Preheat oven to 200° C.
- Put cubed bread in a single layer on a baking sheet (or stone). If using a pan, spray lightly with cooking oil. Bake for 10-15 minutes or until golden.
- Combine dressing ingredients in a large bowl, stirring with a whisk.
- Add toasted bread, greens, tomatoes and onions to the bowl. Toss gently to coat and serve immediately.
